African Vegetable Soup~

~Snow squalls~

Yesterday afternoon it started to snow... quite hard for a while. Thankfully it melted as soon as it hit the ground.
But it was very damp, windy and cold out , so it felt like a soup kind of day.



~African Vegetable Soup~

This makes a lovely and hearty autumn soup, but is equally comforting on a snowy, spring day.

What do you make for comfort when the weather suddenly turns cold again?

~African Vegetable Soup~

1 Large onion~ chopped
1 Cup chopped celery
2 Medium sweet potatoes, diced
Saute' in the bottom of your soup pot in a little olive oil until just tender-crisp.
Add 4 cups of water
{I have substituted my own vegetable stock for the four cups of water-and it's delicious}
1- 28 oz. can of diced tomatoes
To this add:
1 tsp. salt
1 tsp. Turmeric
1 tsp. Cumin
1/2 tsp. dried thyme
1/8 tsp. Cinnamon
1/8 tsp. Red Pepper Flakes
1 Bay leaf
Bring to a boil- reduce heat, cover and simmer about 5-7 minutes.

Add:
2 Small zucchini~ cut into thin half slices
1 Can Garbanzo beans- rinsed
Cook just long enough to soften the zucchini {about 4 minutes}.
Cook Orzo pasta separately and put a couple of spoonfuls into the bottom of soup bowls, then ladle soup into the bowls.
* You can add the pasta to the soup while cooking~ but I don't as the soup becomes starchy and cloudy.

    I'm back in the blog world..and looking forward to catching up with
    everyone.
    so..you say..it's still snowing!!
    I'll take that as a good sign, as we're heading up to Stowe the first week in April for yet another ski race...

    I'll certainly try the recipe you posted...I'm a big fan of soups..sounds
    delicious.

  4. What a lovely post Debra, very cozy. That is some snow squall, Miss Debra! We had threatened snow showers but nothing came of it overnight. Yesterday was gorgeous but with a "bite" in the breeze.

    I am going to print your recipe at work, it looks delicious and has many of my favorite ingredients. Also low cal. I also agree with you about the pasta. Most times I will cook the pasta separately and add it to the serving. As it sits overnight the pasta sops up the broth and changes the soup entirely, thus it becomes Stew-p.

    For cold days around here I have a nice recipe for Brown rice and lentil soup. Have made it for years, it is an old recipe from Gourmet. Also make a minestrone.

  5. Isn't this the nuttiest winter ever? Yesterday was spot on gorgeous... warm and breezy... just like Spring. However, Monday night we had, and needed, a roaring fire in the fireplace.
