Simple Salad~

~ Iceberg wedge with chunky bleu cheese~


I love salads and have one just about every day. I like the young spring lettuces, Mescalin mix, Summer Crisp, Romaine for a good Caesar, spinach for a warm spinach salad that is my husband's specially. I frequently add fresh basil leaves and some fresh tarragon to my salads when the herbs are fresh from my garden. I add just about anything to my salads. Left-overs from the night before, dried fruits, fresh berries, apples, cheeses, roasted sweet potato and butternut squash. Toasted nuts add a little crunch to salads- pignoli, walnuts, pecans are a wonderful

addition to any salad with roasted vegetables. Fresh, sweet peas right out of the pods are delicious. When the tomatoes are in season, I sometimes make a salad of tomatoes, cucumbers and red onions with just a drizzle of good olive oil and balsamic vinegar. There are no rules when it comes to making a great salad. Just use the very freshest salad makings. Frequently in the summer we have just a big salad for dinner. It's a meal in itself!


But when I'm alone, or I'm short on time~ I will always reach for a fresh, cold wedge of iceberg lettuce with some thick, chunky bleu cheese dressing. If you think that iceberg lettuce is a thing of the past or boring-try this!

  1. In a few minutes I wanted to prepare Pasta, but after this I want salad....
    When I was 19 I was in Chigaco and ate a Ceasar Salad for the very first time in my whole life...oohh.....since then it's my favourite. XXX, Carmie.

  4. Yep, I love a good Caesar (or Seizure Salad as MOTH calls it!). My most requested salad at home is Rocket, Walnuts, sliced paper-thin fresh Pear, freshly shaved Pepper Parmesan tossed with a simple Raspberry Vinagrette. Not at the moment though, too cold, it's soup weather here big time.

    P.S. While poor old Iceberg has been usurped by the trendy Boutique lettuces, I always have one in my refrigerator for old times sake.

  5. I also like many varieties of salads, however,a quick "go to" salad for me is romaine lettuce, red onion, orange segments, shred carrots, pignoli nuts and shaved parm. cheese. All topped with alittle olive oil, balsamic and black pepper.

  6. Does Cobb Salad count? te he... I adore an all green salad with a mixture of lettuce. Nothing can beat a beet, bibb, bleu cheese, sprinkled with walnuts on top salad. Iceberg is a staple here- a stand-by when the other greens have been devoured. My husband eats a salad, like Europeans, after every meal. He calls it his dessert.

  9. Me too. We eat salads most nights as well. I also throw in any and everything I have on hand. All your comments have made me hungry for salad now and it is only breakfast time in Anchorage as I type this comment!! Maybe egg salad........ :) Or no! A fruit salad!! Have a lovely day everyone!!

  10. That photo is making my mouth water! The only thing that can deter me from a salad is blue cheese, I just cant learn to like that dressing.
